Harvesting Tips

Harvest arugula in the early morning before the heat of the day or in the late afternoon. Heat causes plant stress and chemical changes triggered by heat, sunlight, and water loss cause the bitterness.

Baby Arugula

Days to harvest: 20–25 days after sowing
Leaves are small, tender, and milder in flavor. You can harvest by snipping outer leaves or cutting the whole plant an inch above the soil for regrowth.

Mature Arugula

Days to harvest: 35–50 days after sowing
Leaves are larger with a stronger, more peppery flavor. Plants may begin to bolt (flower) more quickly in warm weather, which can make the leaves more bitter.
