Harvest Tips
Baby Bok Choy: Ready in about 30–35 days after sowing. Harvest when the heads are 4–6 inches tall.
Full-Sized Bok Choy: Usually ready in 45–60 days. The heads should be 8–12 inches tall, with firm, crisp stalks and full, glossy leaves.
Partial Harvest
Use a clean knife or garden shears to cut outer leaves about an inch above the soil line.
Leave the inner core intact — it will continue producing new leaves for another 1–2 rounds.
Whole Head Harvest
Cut the entire head at the base, about 1 inch above the soil.
This method is ideal if the weather is turning warm or if the plant is nearing the end of its cycle.
It is ideal to harvest in the early in the morning when the leaves are crisp and cool. Always avoid harvesting under direct sun, which can wilt the leaves quickly.
