The Oaxacan Green Dent Corn was originally grown by the indigenous Zapotec people of Southern Mexico, where it has been cultivated for generations as a vital staple crop.

This heirloom corn was traditionally used to make green flour tamales and was grown alongside beans and squash in the ancient “Three Sisters” planting method—a harmonious system that supports soil health, structure, and nutrient exchange. The ears come in a range of gorgeous colors, from deep emerald green to soft yellow-green, making it as visually striking as it is culturally significant.

Plants produce 6–10” dented ears on tall, sturdy stalks that can reach up to 7 feet. This variety is notably drought-tolerant and adaptable, with the ability to perform well even in higher latitude regions.

Direct sow after the danger of frost has passed, once soil temperatures have warmed. Plant in blocks rather than single rows to ensure proper pollination, spacing seeds about 8–12 inches apart. Oaxacan Green thrives in full sun and benefits from rich, well-drained soil. While it is drought-resistant once established, consistent watering during early growth and pollination will support strong yields. As a dent corn, it pairs beautifully with beans and squash in a Three Sisters planting.

Allow ears to fully mature and dry on the stalk for use as flour corn. Husks will dry and kernels will become hard and dented. Harvest before heavy rains if possible, and continue drying in a well-ventilated space if needed. Once fully dry, kernels can be removed and ground into a vibrant, nutrient-rich green corn flour, traditionally used for tamales and other masa-based dishes.
