The name daikon means “big root” in Japanese, and some varieties live up to the name, growing over 20 inches long and weighing several pounds. We especially love daikon as a cornerstone vegetable in our homemade kimchi—its clean flavor, satisfying crunch, and fermentation-friendly texture are hard to beat.

Gardener Tips
Thrives in cool weather and is well-suited for cultivation in both spring and fall. It can tolerate light frosts but may bolt in hot weather. Plant in August for a fall/winter crop!
