Organic Calypso Bean - Phaseolus vulgaris

This is one fine looking dry bean. Black and White mottles look almost like a yin yang symbol. Also known as Ying Yang and Orca bean among other names. And the taste as a dry bean is superb! This heirloom retains it markings and doubles in size when cooked. Great smooth texture for baking, stews and for soups. Widely adapted.
