This early-producing, ball-shaped heirloom cabbage may trace its roots to the German variety Ditmarscher, later refined and introduced in 1909 by H. Hartman & Company of Denmark. A favorite among traditional European gardeners, Copenhagen Market quickly gained popularity for its reliability, flavor, and ability to thrive in small spaces.

The compact plants form dense, uniform heads 6–8 inches in diameter and weighing 3 to 4 pounds — an ideal size for the home garden or small-scale farm. The heads store exceptionally well, holding firm in the ground and in cool storage with minimal splitting, making them a dependable staple throughout the season.

Space plants 24"-36" apart. Use sharp knife and cut at ground level to harvest. Cut head when it reaches 6"-8" (weighing 3-5lbs), and out leaves fold back. Heavy feeder, mulch at base.
